The cabernet grape makes firm wines that often need ageing as tannin outweighs fruit in the early days. However, Patersons’ 2017 vintage, while firm in the true cabernet mould, also offers fleshy, ripe fruit flavour that offsets the tannins. The result is a rich, powerful wine that can be enjoyed now, though the firm tannins demand the company of high-protein food.
