The fruit is grown in the cool climate region of Hilltops in NSW Fermentation with wild yeasts and maturation in premium French oak, has produced a Merlot displaying plum, blackcurrant, clove and licorice with well-integrated oak and Bordeaux style tannins. This is a perfect match for roast duck.
This wine will benefit from cellaring for 3-5 years, gaining further complexity with age.
